Spruce tops (also called spruce tips) are the foot long evergreen tops of a small spruce tree. You'll often see them used for outdoor decorating during the holiday season arranged in containers and window boxes.
The gathering of spruce tops is a delicate process, and does not involve the harvesting of actual tree tops. Spruce tops, which grow up from the root system of a mature spruce tree, are a regenerative crop that can be harvested again and again!
